Regulations

The World Burger Contest is a comprehensive and innovative competition, divided into 3 parts. It is not possible to compete for just one or two recipes.

The young talent must be a person in training, whether at a CFA or a catering school. The age limit for young talent is 26.

Candidates will have 1 hour for each of the 3 Burgers, which will be sent out one after the other every hour. In order: traditional, vegetable, sweet.

Participants

The artisan who works with you to validate your recipes does not have to be on site to take part in the final at Sirha. He or she will of course be welcome in the competition area, but must remain on the public side. The apprentice is, of course, expected to lend you a hand for the duration of the final. You can of course choose your apprentice, or if you wish, the organizers can suggest young talents.

The transmission of know-how is an essential value of our competition. The participation of an apprentice in a pairing with the main candidate is essential for the final.

If the candidate has not found an apprentice, the competition organizers will select one from the best CFAs in Lyon and put them in touch with the candidate so that they can prepare together for the final.

The World Burger Contest is open to any natural person, of legal age, exercising a professional activitý in the food trades sector (butcher, pastry chef, baker, pork butcher, fishmonger, cheese maker) or commercial catering (hotel, restaurant, brasserie, café́-bar, food truck, home chef, other. …) or collective, as a self-employed person (under the SSI) or establishment manager, chef de cuisine, cook, commis… and with a diploma relevant to his or her sector of activity.

Can I take part if I come from abroad? Our competition is international. So we’ll be delighted to consider entries from all over the world!

Recipe

As the Veggie Burger is not necessarily vegan, there is no obligation to use a 100% vegan bun. However, the jury will naturally take into account the creativity of all the burger’s elements and ingredients. It may also be interesting to work on the originality of the bun with an innovative recipe (seaweed bun, dry ink bun, etc.). It’s an element of distinction that’s sure to win you points!

Participants are free to organize their production and use pre-processed or unprocessed products according to their own assessment of the time available for the event. Provided that a technical sheet detailing the composition and origin of the products is supplied, with priority given to products from the Auvergne-Rhône-Alpes region referenced under the “Ma Région, ses terroirs” brand. All products brought by candidates will be examined by the jury before the start of the competition, and some may be withdrawn from the candidate if they are deemed not to comply with the competition’s ethics or rules.

You can, of course, combine meat, poultry or fish. Any good idea to encourage creativity is welcome, as long as the balance of tastes and flavors is there!

Creativity and innovation are the watchwords of this competition. Give free rein to your imagination, as long as your final product reflects the hallmarks of the burger and can be eaten by hand.

Equipment

A negative wardrobe will be set up for the final, but will not be on the stage – it will be in the backstage area.

All “small” kitchen equipment must be supplied by the candidate. You are free to choose your own accessories, as long as they do not require any special installation.

Supply

All fruit and vegetables will be available at the Marché de Gros Lyon-Corbas. Candidates must obtain their supplies from the Marché de Gros Lyon-Corbas on the morning of the competition, in accordance with the recipes and commissary vouchers they have been asked to provide during the 2nd selection phase. Products will be delivered to the competition area before the start of the competition.

Candidates may choose products from outside the Auvergne-Rhône-Alpes region, particularly if they wish to promote local products from their region of origin. In this case, he will be responsible for sourcing the products in question, and must provide proof of their origin. These products must remain in the minority, as part of the tasting scale will take into account the good representativeness of products from the Auvergne-Rhône-Alpes region selected from the “Ma Région, Ses terroirs” product catalog.
